I feel your confidence in this statement has probably been misplaced.
The photographer being a significant angle below Sinder makes her appear to be much larger than she is. Typical door height is 80 inches in commercial buildings as required by building codes. Her ears put her just under that. Considering her heels are likely 3-4 inches, it puts her fake ears at 9-12 inches range as her ears are 3x the size of her heels. Adding the ears and heels together, you're looking at a total boost of anywhere between 12-16 inches. So overall he actual height may range from 64-68 inches (5'4"-5'8").
EDIT: Did further examination into the heel height. Heel height is 16px while Sayu is 268px or 16.75 heels. If the heels are 3 inches, that would put Sayu at 50.25 inches (4'2"). However if the heels were 4 inches, that would put Sayu at 67 inches (5'7"). I highly doubt Sayu is either of these heights so 3.5 inch heels are the most likely result, as that would put her at 58.625 inches (4'10"). So if we carry that 3.5 inches over to the previous calculation of the fake ears being 3x the heels in height, her total boost is 4x heels or 14 inches. This would put her actual height around 66 inches or 5'6". She may be ~1 inch shorter because she is several inches in front of the door and the photo is taken from below Sinder.
