Funnily enough, Ollie has recently explained that she feels 'unromanceable', as in 'not adequate for a serious relationship'. That's why she likes all the 'pregnant zombie' fanart - because her being pregnant suggests that someone would find her desirable enough to be the mother of their child. And also because getting an undead girl pregnant most likely requires A LOT of sex. Jesus, does my oshi have issues...

They've got to have known in advance that Bae is taking a break soon, yet they decide to have her in the guild with already one less member.

As for Mumei, she has already interacted with many of her kouhais in the past, so it's not like this is a "once-in-a-life-time" chance for her or anything. She also went dungeon-ing with some of her kouhais, like Shiori and CC. She only hung out with SNOT members on Day 2.
