I've been thinking about pizza again. Think I want to experiment with other proteins. Clam pizzas are a thing, especially around places like New England, but what about the other fish? What about not with a white sauce? Maybe pesto or a red sauce? Keep it bright with some lemon and mix it up with some hot sauce. The thought process goes something like this:

>there's other tinned fish that's quite good actually (not tuna (for pizza, too strong))
And you could treat the tinned fish similar to how you'd treat chicken and do a buffalo chicken style pie but with maybe sardines, herring, or something else. I just don't know how heat tolerant it is. Use fish that's seen in and around the med sea and available here in the states to try it out. Red's idea of a gumbo could also be banging, a shrimp & andouille sausage w/ cheese and a cajun spiced red sauce could work too. We just need to respect the Pizza Dao.
