You try using FFZ audio compressor? FFZ is a good plugin for twitch. Streamers are shit at mixing/balancing their audio. It mostly fixes their retardation most of the time.

You also pay attention to the tiles discarded to try to figure out the opponents hands and to see if certain sequences are possible still. There are defensive or offensive plays given the scenario as well. You may want to just discard tiles that you know the opponent doesn't need so they are less likely to get a winning hand.
