Jordan was still alive during the writing of I think the first one? Robert knew he might not finish the series midway through and understood what finishing that meant to his family & his fans. GRRM doesn't seem to want to actually finish the project, likely because it had spiraled out of control and there's likely no feasible way to do it. So it's just better to never actually finish it and leave some notes around that someone will be contracted to put something out in about a decade.
I kinda hope George kicks the bucket before the next book is released so that GoT/ASOIAF fans are forced to just sit in a giant Reddit circlejerk for the next three decades trying to figure out how the rest of the plot goes, leaving the rest of the internet free from their PBR-stank breaths.
Although the last season deviated hard, I heard that the whole part about Daenerys going crazy and killing everyone in King's Landing was a part of GRRM's draft for the ending. It seems like regardless of the medium, the ending was going to be shit anyways.
I mean, even if he lives 30 more years, he still isn't writing the book, so that will happen, anyway.

That GRRM will never finish the books is the worst kept secret in the Spec-Fic industry. The ASoIaF project was started as a repudiation of Tolkien. See his infamous "What is Rohan's Tax Policy?" quote. Now he's at a point where the only logical way to finish the book is to give it the old Tolkien Big-Damn-Heroes ending. And because that fat, draft-dodging, hippy fuck can't bring himself to swallow his pride, get on with the business of writing and refute his own premise? Well it looks like he's just going to sit on his ass eating fried chicken and watching football until his fucking heart explodes.

Also, when Larry Correia wraps up his current trilogy he's going to include a note about how he conceptualized, wrote and finished all three BETWEEN GRRM's last book and his (highly hypothetical) next book.

GRRM doesn't have enough pride in himself to admit he misunderstood Tolkien's perspective, which ends up invalidating his own. Unironically, the entire thing has played out in the way the Epic Rap Battle of History handled it.
And, without taking too many shots at GRRM, he's never had children and only made his money very late in life. He doesn't actually grasp what legacy truly means because he'll leave none by his choices. In 40 years, kids will still be enjoying Tolkien and Peter Jackson's movies will definitely live on for decades, but ASoIaF will be something a bunch of 60 year olds reminisce about like Boomers do about Gunsmoke. GRRM has looked at the end of his series as a final failure because he's created those conditions.
Also, frankly, the Dany turns nuts was figured out by the really obsessive book readers a decade ago and the ending of the TV show would fit the outline that GRRM would have given the TV series staff for where things went. They just fumbled the Face-Heel turn in the hardest way I think has ever happened in Media. The show ended in roughly the same world staff as they books would have. Now, he can't finish that because of, again, pride. (That ending is perfectly logical and it's the journey that matters, but the whole world got to see the terrible fan fiction version of it and it's now a dead storyline.)
