Shit, I accidentally bumped into two shinies during my last SV playthrough, and I wasn't even looking for them!

The overworld does make it much less time-consuming since you don't have to load up the battle screen every time. SV's dogshit draw distance makes it easier since you can just take a few steps back to despawn the Pokémon then step forward again to reroll, rather than having to leave the area and come back.
