If the corp and talent can't come to terms then IP ownership functions as mutually assured destruction. But that then gives both sides an incentive to negotiate. Idol's upcoming talent departures are an example of IP ownership working out, letting the talent and corp come to a mutually beneficial arrangement compared to a graduation. There are probably other cases that we'll never hear about because the negotiations were private.
If you've got a contract that entities you to a share of all income from that IP, that's not meaningfully different from owning a share of that IP. If a talent wants to do a discord session without using their character name or likeness, that's very hard to prevent with any kind of contract - indentured servitude is illegal, and if you want to maintain the legal fiction that the talents are independent contractors rather than employees then you can't have a non-compete agreement. All you can really do is hope that the character and whatever corporate support you offer them makes it worth their while to keep working for you (and if it isn't then frankly why should you get anything more from them?) and be prepared to push the big red button if relations really break down.

I've been thinking for a while. I kind of want to do a monthly TVA Newsletter of some sort. It's just a shower thought at the moment, but I think that it's time the forum established a better and more consistent, community-focused method of tracking events and general goings-on in the industry, in a way that very quickly allows people to navigate to events they find relevant to their personal interests, while simultaneously not hiding events they wouldn't normally be interested in so the community doesn't end up partitioned.
