You said you've watched Runie, but I'll recommend some of her content. For your particular preferences I recommend her most recent Phasmo stream as a teaser, and her RE2 playthrough just because it was good.
Start at 1 hour, the first hour was yapping while trying to get DMC1 to work. What came next was the most autistic "beginner" Phasmo gameplay I've ever witnessed:

Runie is as creative as Mint and Doki, yaps good in the style of Kiara, is as sweet as Amiya, and has zero loud = funny moments. She is very much not a gamer but she is a bone-headed perfectionist, that means you get the game learning journey every time in a good way. She'll play a game once or twice then decide to commit to a playthrough or not, and when she commits she finishes. No FOTM and no open-ended games.
But to be honest a good 60% of her content is non-gaming, split between roleplay/chatting with the occasional karaoke. I hadn't encountered a RP streamer before Runie so I had no idea what I was missing, it takes away the directionless feel of a chatting stream and brings in a story structure. I dunno if you're just a hardcore gaming stream enjoyer and if so there are better people to watch, for Phase maybe Jelly is good. But for me Runie is very easy to watch and there are very few misses in entertainment quality.
