I think her proportions anime wise line up more with the fairly realistic types than loli vtubers. Her slight redesign even more so. She also doesnt really put off a voice that mimic other loli vtubers either. I dont see it

Pippa is not loli. Significantly more goes into the "loli" aesthetic/scene than just being small-chested and short (as much as a PNG can be given a height, anyways). Only secondaries, tourists, and drive-by shitters think that's it. Their opinion doesn't matter and should be discarded as a matter of course.
There's speech patterns to consider, mannerisms, clothing and fashion choices, general body proportions, and so on. There's something of a gradient I'll admit but someone needs to be hitting multiple points, you can't just go with flat chest = loli for the same reasons throwing cat ears on something doesn't make a furry.

You underestimate the sheer autism in some women when it comes to create things style games. The Sims for example is fueled by bored housewives. It's not surprising to me at all that a lot of women genuinely end up enjoying minecraft.
