ok but the REAL QUESTION. Best Cheese to go on the Mac.

Cheddar, Mozza, Gouda, Jack, Blue, Goat, Parm, Swiss? Solid or Melted? do you bake it with the mac or do you add it after?

For me it's gotta be a 80/20 mix of Cheddar and Mozza. for some reason i can't stand other orange cheeses. and you gotta add the mozza for that cheese stretch.

also you add a little bacon too Mmmm numnum.

You see, those are all real cheeses and not a processed "cheese" product that's so far removed from cheese that they have to put on the box that it's made with real dairy, which is the way Americans like it it seems. That's where you went wrong.

Cheddar and Gouda baked with for me.

Americans appreciate real cheeses and not just convenience Mac & Cheese, don't believe everything reddit tells you.

I make mine with 4 cheeses: cheddar, gouda, mozzarella, and parmesan (though I proportion more parmesan and cheddar), all shredded and thrown on top of the pasta. I also add bread crumbs to make a nice crunchy layer. I also add in diced pancetta and of course black pepper. I always bake it like a casserole, and boil the pasta ahead of time. I've also made truffle mac and cheese by drizzling a bit of truffle oil onto the shredded cheese and then throwing in a few bits of truffle onto a serving slice (I prefer winter truffle, but summer truffle works too).

I was more thinking of how hard the auto industry fucked over americans.
When you ask an american what's their national food, some dumb fuck will say Pizza (Italia), Burger (Germany), French Fries (Belgium) or some other food that originated elsewhere.
But there is one food that is unequivocally American, invented by Americans, consumed by Americans and and really shows America as a country

The subway sandwiches

One of the most gnarly food ever in existence. There's not enough word to express how disgusting it is. Also embroided in fake meat, fake vegetable, fake bread scandals. It wouldn't even qualify as prison food in most countries.
Yet American, land of the free, find themselves consume subway sandwiches and moldy bread, etc. on the regular. Because their politicians (lobbied by the auto industry) make it impossible to get fresh, good food in walking distance.

For bonus heat up pan low heat apply parm. wait. enjoy crispy parm circle which is great on many things you wouldn't normally put parm on.

you can do this with most cheeses but Parm seems to benefit most.
