I make mine with 4 cheeses: cheddar, gouda, mozzarella, and parmesan (though I proportion more parmesan and cheddar), all shredded and thrown on top of the pasta. I also add bread crumbs to make a nice crunchy layer. I also add in diced pancetta and of course black pepper. I always bake it like a casserole, and boil the pasta ahead of time. I've also made truffle mac and cheese by drizzling a bit of truffle oil onto the shredded cheese and then throwing in a few bits of truffle onto a serving slice (I prefer winter truffle, but summer truffle works too).ok but the REAL QUESTION.
