Gotta be a triple tie between Emplemon, Defunctland Kevin and Summoning Salt.
Emp is really good at compelling storytelling, Kevin has the best most complete research and Summoning Salt offers the clearest narration and info delivery. Each dominates one aspect which I think is essential to video essays and all three have both videos I find tediously boring and those I cannot help but rewatch for just how good they are.
