From what I've seen she gets super into what she gets super into but has little fucks to give otherwise. See the Palworld obsession as just the most recent example of something catching her, and Overwatch before it was made into shit was another. As for off stream the only game I can remember that she has mentioned several times but won't play on stream as Pippa at least is Monster Hunter.
